The Kinshasa Children's Home is located in the Democratic Republic of Congo in central Africa. These doors of hope give refuge and love to 70 orphaned children in the busy and bustling capital city; Kinshasa. In a nation that has been in constant turmoil for many years, an oasis of protection for these little ones has been found. Kinshasa Children's Home is that place and we welcome you in to see God at work.

I love everything about food. Cooking, eating, shopping for it, growing it and researching new recipes and ideas. I had a tendency to cook really rich foods, but at the beginning of 2008, I decided to try and clean up my eating to improve my health. This had the unfortunate side effect of making my boyfriend less of a fan of my cooking (not to mention what it did to my own happiness in the kitchen). To his credit, he loves gourmet food, but at his base he's a guy and he loves guy food. Anything with butter and red meat is sure to please. So now I am in search of that happy medium. Trying to cook healthy some of the time, while continuing to make those rich foods that satisfy like nothing else. I started Apples and Butter to chronicle my cooking exploits while I try to up the healthy (an apple a day keeps the doctor away) and tone down the butter, all while still indulging my affinity for rich food and my boyfriend's appreciation of butter and red meat.
